Infused Mushroom Risotto
Creamy mushroom risotto with cannabis olive oil.
Ingredients
- 1½ cups arborio rice
- 2 tbsp cannabis olive oil
- 1 onion
- 3 garlic cloves
- 400g mixed mushrooms
- ½ cup non-alcoholic white grape juice
- 1L warm vegetable broth
- 50g parmesan
- 2 tbsp butter
- Salt, pepper, thyme
Directions
- Sauté onion in regular oil. Add garlic and mushrooms until golden.
- Add rice; stir to coat. Add grape juice; cook until absorbed.
- Add broth one ladle at a time stirring until each is absorbed (20 min).
- Off heat: stir in parmesan, butter and cannabis olive oil.
